Every batch of our beef achar starts in her Hathazari courtyard: bone-in beef slow-fried in mustard oil, then left to sun-cure for 21 days before it is jarred.

Their kasundi has proper nose-heat. I fold it into butter for grilled prawns.
Aged cheddar, a smear of nolen gur, a sliver of shatkora. That is my whole cheese course now.

We buy from people, not factories. Here are the kitchens, hives and cellars behind every jar.
In 1987 our grandmother cooked for her village mezban and jarred the leftovers in mustard oil. Neighbours came back for the jars, not the feast. Today we work with a handful of producers who still cook that slowly — in Bangladesh and far beyond.
